Ambonnay meets Tasmania! It’s a tightrope act to showcase the body and intensity of Australian pinot noir in sparkling rosé, while maintaining unerring finesse. Holm oak has pulled it off with particular refinement, showcasing the linear backbone of Tasmanian acidity, with all of the complexity that comes with barrel-fermented pinot: Christmas spice, fruit mince pie, poached cherries and citrus rind.
Floral and musk aromatics carrying to a smooth, creamy and complex palate lush with flavours of ripe melon, spiced pear, subtle oak and earthy wild-ferment characters with lovely fresh acidity providing cut and balance and a lively, tangy edge to the finish. Lovely drinking.
The colour is pale, and the delicately fragrant bouquet has a powder puff quality with youthful primary fruits. This continues on the restrained, subtle, delicate palate, which is almost- dry and balanced. Good drinking now or in the next 10 years. 92 points.
