Botrytis Riesling

Winemaking Notes
Rain in early April followed by warm humid nights and clear days resulted in perfect conditions for the growth of botrytis in our vineyard. Whilst we don’t generally encourage botrytis, this year we decided to leave 6 of our 33 rows of Riesling to make a Botrytis Rielsing. The fruit was all hand picked, including some bunches that were not as botrytis affected as others. The fruit was then destemmed and pressed. The pressed juice was then pumped back into the press to help extract flavour from the drier berries. This was allowed to sit for 10 hours prior to repressing. We managed to extract about 500L of juice from 1.005 tonne which had a Baume of 20. The juice was then fermented without racking and the ferment was stopped at the desired sugar level. The wine was then filtered and bottled.

Tasting Notes
This is a delicious lighter style botrytis wine with succulent honey and apricot characters on the nose which are matched on the palate with lively fresh lime flavours and lovely sweetness. This wine will cellar for at least 3 years.
